This is Day 3 of trying to eliminate dairy from my diet. It went a bit better than yesterday, I think. First, brekky: Scottish oatmeal with (home-made) soymilk, 1/2 banana, 1/2 apple, leftover home-baked Russian rye bread with home-made apple butter, coffee with soymilk. So, I managed to evade the butter, substituting apple butter instead, and managed a no-dairy brekky!
Next, was lunch at the Farm House restaurant. As usual, took 3 eggs, laid by our hens, with me to have them poached. I ate the whites with hot sauce. Today, I planned ahead and took a little container of soymilk (for my coffee) with me. It’s the type of container you get salsa to go in. I also took my home-made apple butter with me, and asked for the toast to be “dry.” Again, averted the dreaded dairy. However, my downfall today was the iceberg lettuce salad: they put a bit of cheese on it, and, I confess, I couldn’t resist the Ranch dressing. Next time, I’ll get lemon wedges and use a little salt, instead.
Finally, the dinner: Prepared a marinated (in lime) salmon, with a “verde” sauce (p. 82 of Sunset Mexican Cookbook: Classic and Contemporary Recipes, Lane Publishing Co., Menlo Park, CA, 2nd priting Jan. 1990, ISBN 0-376-02497-6, generally a SUPERB cookbook, BTW). Sopa seca de fideo (noodle dish from p.93 of same cookbook), and “Three Color Cactus Salad” of onion, nopalitos (marinated cooked cactus strips), and tomato with lime wedges (from p.103 ibid). YUM!
